Washed Anaerobic Process: Clean and ripe cherries are meticulously selected. These cherries undergo pre-cleaning through hand sorting and floating. The selected cherries are then fermented anaerobically in sealed containers for 72 hours. After this initial fermentation, the cherries are pulped using pulping machines, and the parchment beans are submerged in clean water in a demucilager fermentation tank for an additional 72 hours of anaerobic fermentation. At the end of the second fermentation, the beans are washed in water channels by workers and dried on raised African beds under shade for 10 to 11 days.
