Consistent and delicious, this Brazilian coffee comes from various farms in Minais Gerais. Sucafina yhas been expertly blended by its local partner Cooxupé to ensure a consistent cup profile that is impressively unchanged from year to year. .
It guarantees the coffee quality with the NY2 defect control system. NY2 is a designation that assures us that there can be up to 6 defective cores in a 300 gram sample. These very few imperfect seeds provide a flavor so delicious that in most cups, no flaws are noticeable.
Separating the beans by size is another quality control mechanism that ensures the quality of this coffee and is a very important step in the dry grinding process. A sieve grading machine has a series of sieves stacked on top of each other. The green coffee is fed into the machine, and as the sieves shake, beans smaller than the holes in a particular grid continue to fall into a sub-grid until they reach a sieve with holes too small for them to fit. The #16 sieve has holes to hold beans larger than 6.5 millimeters, while the #17 sieve holds all kernels between 6.75 millimeters and 7 millimeters (the size of 18 sieves). Therefore, all kernels in the 16/17 mix will be between 6.5 - 7 millimeters. Uniformity in bean sizes helps keep roasting more stable, as beans of similar size will be roasted in similar orbits.
All these processes ultimately result in Diamond being classified as "SS" (totally soft), achieving a clean and stable flavor profile in every cup.Coffee Grade: NY2 17/18 SS
