Asoguacharos Pink Bourbon FW - Colombia - 2021

Cola, malt and red fruit scents on the nose. On the palate, cranberry, cranberry, fig apple tart are prominent. It is reminiscent of Munich malt due to its malty, dried fruit and cookie-like flavors. As it cools, it turns into raisin and cranberry sorbet. This medium/ medium bodied coffee leaves the sweetness of brown sugar in the finish.

Leaded by Edilme Piedrahita, herself a local coffee producer in Asoguacharos, 27 producers produce unique coffees while maintaining high quality standards.

Each producer processes their own coffee on their own farm, and each one's own special conditions allow each producer to come up with unique variations. The coffee processing experience and application practices of the producers, coming from their traditional roots and handed down from generation to generation, have unique results on the final product they obtain. This traditional processing process, which results in delicious tastes and aromas, deserves to be expressed as the taste of the unique word. After the producers carefully select ripe, red cherries, they pulp the cherries on their farms and ferment them in buckets or tanks. After fermentation, the coffees are washed in clean water and left to dry in "marquesina", parabolic dryers typically found on the roofs of producers' homes.

The Huila-based group takes advantage of educational opportunities provided by NGOs and the national learning service SENA. Producers, who are distinguished members of Asoguacharos, gain access to the high quality coffee market and can demand better prices for their coffees thanks to their production by following high quality standards. In the future, the producer association, which plans to turn its farms into a center for ecotourism, is also taking steps to become conscious tourism professionals by participating in trainings on how to organize tours and how to attract visitors.
